Cape Town’s luxury Belmond Mount Nelson Hotel has welcomed restaurant EDGE Africa to its landmark location and grounds for a season of pop-up dinners that focus on underutilised ingredients and refined techniques.

Led by EDGE Head Chef Vusi Ndlovu and General Manager Absie Pantshwa, the EDGE residency has taken over the 60-seat Oasis Bistro and is open for dinner from Wednesday through Sunday from December 2022 until March 2023.

After a year of successful pop-ups in Franschhoek, Vusi and his team are showcasing their menu against the magnificent, lush Mount Nelson and its Table Mountain backdrop.

To create a comprehensive celebration of the African continent, EDGE sparks creative partnerships with like-minded partners.

Conceptualised by Chef Vusi Ndlovu and inspired by his own heritage and experience, the menu focuses on underused ingredients, cutting-edge cooking methods and recipes that have been handed down through the generations, allowing diners to experience a taste of Africa on every plate.

It is a constantly evolving selection of dishes that highlight native ingredients that have been respectfully, simply, and modernly reimagined. The dishes honour Ndlovu’s past knowledge and intellectual curiosity, as well as the long history of this vast continent. A tantalising picture of Africa will be presented to guests on a plate.

An ever-evolving menu highlights regional ingredients obtained from nearby markets, traditional craftspeople and small-scale farmers, providing an opportunity to support neighbourhood businesses.

A strong sense of community and tradition is evoked by dishes that are reimagined in a modern, minimalist, and respectful manner, with an emphasis on cooking over a flame, evoking the tradition of African storytelling around the fire.

With a strong emphasis on cooking over flames, EDGE’s menu offers a platform for learning about fascinating indigenous ingredients, sourced from markets, traditional artisans and small-scale farmers.

The wine list keeps things close to home with an intriguing rotation of independent producers and specialised boutique wineries. The drinks menu is completed by a specially crafted cocktail list that was created with the EDGE team’s indigenous spirit in mind.

Chef Vusi and his team will present Africa in all her summer splendour against the backdrop of the iconic Table Mountain and Belmond’s Mount Nelson Hotel – the critically acclaimed, beating heart of Cape Town – in everything from the food to the wine to the artwork on the walls.
