It’s no secret that the best food is served when cooked with love. Couple copious amounts of it with passion and raw talent and you get the creations of the incredible Chef Craig Cormack. Introducing Cape Town’s very own Salt Chef.
Craig has been making mouths water for the past 30 years, working at some of the most prestigious eateries our city has to offer. His talent, dedication and sought after dishes have led him to establish businesses of his own, including the likes of Overture restaurant, The Goose Roasters, Die Wors-rol, Bertus Basson signature foods, and Amoleh Salt.
Currently, you’ll find Craig working his magic at the prestigious Waterford Wine Estate where he heads up the Courtyard Restaurant alongside Beau Du Toit.

Craig has more than paid his dues to the restaurant industry, earning him a reputation that surpasses accolades on paper. Cormack is an innovative cook at the top of his game. And we at Cape {town} Etc are proud to shout his name from the rooftops.
Now, more than ever, we as locals need to stand behind Capetonian creatives. The COVID-19 pandemic has undoubtedly left our local chefs in the trenches. However, it has symbiotically slapped us in the face, forcing us to honour those who have not only delivered flavour throughout the years, but put our beloved city on the map.
Cape Town stands proudly as one of the best foodie destinations in the world, and that’s because of experts like Chef Craig. So, COVID-19, we thank you for the wake up call. The time to appreciate those that make Cape Town great, is now.
Craig has further set himself apart from the crowd with his passion for the purest, both local and imported…salt!
Commonly appreciated as nothing more than seasoning or the final sprinkle upon dishes before they leave the pass, salt has been given new life by the Salt Chef. He is a self-confessed salt addict who is taking the ingredient to new heights.
His fascination with the mineral has spurred on a new way of cooking and eating, and has led the chef on adventures around the world in search of its many forms.
Over the years, his collection of salt has grown exponentially. He now sports over 184 types of naturally occurring salts in his home, each lending a unique flavour profile that inspires the dishes he creates.
An array of salts have made their way to Cape Town from all over the world. Cormack couldn’t help but have a laugh at the suspicion that came with importing little bags of white powder. All in the name of flavour!
Chef Craig Cormack welcomed us into his home, where we had the opportunity to watch the salt master work his magic. His methods are truly unique and certainly worth celebrating. Not only that, he is a wonderful human being – salt of the Earth, should we say.
