Christmas day is finally here, which means we going all out when it comes to creating those magical Christmas meals that makes one take a three-hour nap after the second serving. However, some people always find it difficult to find the correct balance between the meals that they have prepared on Christmas day, whether it is roast beef, a nice pork fillet or even a simple potato salad.
Here are some easy meals you can whip up to compliment your other favourites on your Christmas table:
Easy Cheesy Cornbread
This meal is the perfect addition to any Christmas lunch or dinner. It’s not too heavy on the stomach, but very filling.
Ingredients:
- 1 cup McCain Sweet Corn
- 500g Self-Raising Flour
- 1 cup of Grated Mature Cheddar
- 1 tsp Paprika
- 1 tsp Mixed Herbs
- 1 Egg
- 500ml Butter Milk
- 1 Loaf Tin (1L 28cm x 13cm)
Method:
Preheat the oven to 180°C and grease your loaf tin. In a bowl, add the flour, paprika, mixed herbs and cheese and mix. Add buttermilk and egg, mix until combined. Fold in 1 cup of McCain Sweet Corn Pour mixture into a prepared loaf tin and bake in the oven for 1 hour. Serve and enjoy!
Goats Cheese & Roast Veg Tartlets
Prepare to impress your guests with this delicious yet easy version of a traditional quice.
Ingredients:
- 700g McCain Classic Roast Vegetable Mix
- 400g Ready Rolled Puff Pastry
- 100g Chevin Goats Cheese
- 2 TBSP Lemon Juice
- ¼ cup of chopped fresh herbs of your choice
- Salt & pepper
- 4 x Mini Tart Moulds (9cm x 9cm)
Method:
Prepare McCain Classic Roast Vegetable Mix according to instructions on the packet. Line greased tart cases with ready-rolled puff pastry, place onto an oven tray and set aside. In a bowl, whisk the goat’s cheese together with the lemon juice and salt and pepper.
Stir in the chopped fresh herbs and then transfer to a piping bag. Pipe the goat’s cheese mix into the prepared tart cases before spooning in the McCain Classic Roast Vegetable Mix. Bake tarts in the oven for about 20-25 minutes at 180℃ until pastry is golden brown. Remove tarts from the baking tray and place them onto a serving platter. Pipe a bit more goats cheese mix onto the tarts and garnish with some fresh herbs.
Festive Lasagne
Ingredients:
- 400g McCain Mashed Butternut
- 400g McCain Creamed Spinach
- 9 Sheets of Lasagne Sheets
- 4 cups of Grated Mature Cheddar Cheese
- 4 cups of Grated Mozzarella Cheese
- 500ml Pre-made or bought Tomato Sauce
- Fresh Sage leaves
- Oven Dish (1.8 L 29cm x 18cm)
Method:
Prepare the McCain Mashed Butternut and McCain Creamed Spinach according to instructions on the packet. Preheat oven to 180℃, in an oven dish, layer the lasagne sheets, sauce, McCain Mashed Butternut, McCain Creamed Spinach and grated cheddar cheese and repeat until your oven dish is full.
Sprinkle the grated mozzarella cheese over the top and decorate the top with fresh sage leaves. Bake in the oven for 30 minutes until the cheese is golden and bubbling. Remove from the oven and allow to stand for around 10 minutes.
Festive honey glazed carrots
Ingredients:
- 250 g McCain Baby Carrots
- olive oil
- 1/4 cup honey
- 1 tbsp butter
- 2 or 3 cinnamon sticks
- pinch salt
- 1 tbsp orange juice
- fresh parsley — chopped
Method:
In a pot, bring a small amount of water to a boil. Add McCain Baby Carrots and boil for 3 minutes. Drain water and heat a pan and add some olive oil.
Add McCain Baby Carrots to the pan. Add butter, honey, cinnamon sticks and a squeeze of orange juice. Sauté McCain Baby Carrots until perfectly glazed, season with a pinch of salt. Garnish with some chopped fresh parsley.
