A meeting of culinary giants
This August, Amura by Ángel León at Mount Nelson, A Belmond Hotel, hosts a four-night residency bringing together Chef Alain Roux and Chef Ángel León, six Michelin stars between them. It’s the most ambitious collaboration the Cape has seen.

French tradition takes the stage
Chef Alain takes the reins for the first three nights with a six-course tasting menu built on classical French technique and local produce, including his signature truffle croque-monsieur and a warm raspberry soufflé that has featured on The Waterside Inn’s menu for over half a century. His restaurant has held three Michelin stars since 1985, 41 consecutive years, unmatched outside France.

The sea takes over
On the final night, Chef Ángel joins him for a Four Hands Dinner, the first of its kind on the continent. Known as ‘The Chef of the Sea,’ Ángel has built his reputation and three stars at Aponiente, on marine ingredients most kitchens overlook. Amura is his first restaurant outside Spain.

On the menu
The Four Hands Dinner pairs Chef Alain’s pan-fried lobster medallion with white port sauce against Chef Ángel’s plankton risotto. The evening opens with Moët & Chandon and seats 40 guests. South African chef Wandile Mabaso joins the kitchen throughout.
