David Higgs is bringing his live-fire fine dining establishment Marble to the Cape. Marble debuted in Johannesburg in 2016 and quickly gained a loyal following for its relaxed approach to fine dining, as well as its innovative use of fire and flame in a restaurant that was equal parts eatery and theatre.

Higgs is now opening Marble’s seaside outpost in the heart of the V&A Waterfront. Marble Cape Town will be located in the original Union-Castle Building, which was built in 1919 to serve the busy passenger and shipping line.
The historic structure is being stripped down and reimagined, with Marble taking over the top floor to serve fiery fine dining with memorable ocean and mountain views.
‘We’ve always prided ourselves on selecting prime locations for our restaurants, and Marble Cape Town is no exception,’ said chef-patron David Higgs, co-founder of Marble. ‘The panoramic views from our top-floor venue are simply spectacular, offering guests an unforgettable dining experience surrounded by the beauty of Cape Town.’

Marble Cape Town can accommodate up to 300 diners, making it one of the largest upscale restaurants on the V&A Waterfront. The Johannesburg location has long been known for its elegant decor, courtesy of Marble Group interior director Irene Kyriacou, and expect an ocean-inspired expression at Marble Cape Town.
The same will undoubtedly apply to the menu. The Marble experience is distinguished by open-plan kitchens and fire-based cooking, and Higgs will undoubtedly bring that same flair to Cape Town. While Marble Johannesburg focuses on prime cuts of aged beef and lamb, Marble Cape Town will place a greater emphasis on seafood and vegetables, with a Mediterranean twist.
While the finer details are still being worked out, Marble Cape Town is expected to be a delicious new addition to the V&A Waterfront when it opens in late 2024. Unfortunately, no firm date has been set for the first seating.
